
Salsa-Dipped Pambazo with Potato and Chorizo

Instructions
Boil the diced potatoes in salted water until just tender, about 8 minutes. Drain and set aside.
Cook the chorizo in a skillet over medium heat, breaking it apart with a spoon, until browned and the fat renders out, about 8 minutes. Add the cooked potatoes to the skillet and toss together, letting the potatoes absorb the chorizo flavor and get slightly crispy. Season with salt if needed. Set aside and keep warm.
Toast the guajillo and arbol chiles in a dry skillet for 1 to 2 minutes per side. Transfer to a bowl, cover with boiling water, and soak for 15 minutes. Drain.
Blend the soaked chiles with the garlic, cumin, oregano, and 1 cup of warm water until smooth. Strain through a sieve into a wide shallow bowl. Season with salt.
Slice the pambazo rolls in half horizontally. Dip each half, cut side down, into the guajillo salsa, letting the bread soak up the sauce for a few seconds. Flip and dip the top side briefly as well.
Heat oil on a flat griddle or large skillet over medium heat. Place the salsa-dipped bread halves cut-side down and cook for 2 to 3 minutes until the surface is crispy and slightly caramelized. Flip and toast the other side for another minute.
Fill each pambazo generously with the chorizo and potato mixture. Top with shredded lettuce, a drizzle of Mexican crema, crumbled queso fresco, and salsa verde if desired. Press the tops on and serve immediately.
