Ingredients

- 1 tablespoon toasted sesame oil

Instructions
Season the warm rice by folding in the sesame oil and sesame seeds. Divide between two lunchbox compartments or bowls, pressing gently to shape.
Heat a non-stick skillet over medium-high heat with half the vegetable oil. Fry the spam slices for 2 minutes per side until golden and slightly caramelized on the edges. Set aside on paper towels.
In the same skillet, fry the eggs sunny-side up over medium heat until the whites are set and the yolks are still runny, about 3 minutes. Season with a pinch of salt.
Bring a small pot of water to a boil. Blanch the spinach for 30 seconds, then immediately drain and squeeze out all excess water.
Toss the blanched spinach with the minced garlic, soy sauce, and a drizzle of sesame oil until evenly coated.
Arrange each dosirak box: place the seasoned rice on one side, then neatly arrange the fried spam, seasoned spinach, pickled radish, kimchi, and roasted seaweed strips in separate sections.
Top the rice with the fried egg. Add a small dollop of gochujang on the side if desired.
Serve immediately, or close the lunchbox lid and pack for an on-the-go breakfast.
