Arrange the stew ingredients in sections inside a large, wide pot or Korean army stew pot: place the spam slices, hot dog slices, chopped kimchi, baked beans, tofu slices, rice cakes, and enoki mushrooms in their own neat clusters.
Whisk together the gochugaru, gochujang, garlic, soy sauce, and kimchi brine in a small bowl to create a paste, then dollop it in the center of the pot over the ingredients.
Pour the chicken broth around and over everything, being careful not to completely wash the paste off the ingredients.
Set the pot over medium-high heat and bring to a vigorous boil, about 8 minutes. The paste will dissolve and color the broth a gorgeous red as it heats.
Nestle the ramen noodle blocks into the broth, pushing them down to submerge. Cook for 3 to 4 minutes until the noodles soften and separate.
Lay the American cheese slices right on top of the bubbling stew and let them melt into a gooey blanket, about 1 minute.
