Instructions
Season the shrimp with sake and set aside for 5 minutes. Cut the chicken into small pieces and lightly season with a pinch of salt. Quarter the shiitake mushrooms.
Beat the eggs gently in a bowl using a fork, being very careful not to create bubbles or foam. The goal is a smooth, homogeneous mixture without any froth.
Combine the cooled dashi, mirin, light soy sauce, and salt. Stir to combine. The dashi must be at room temperature or cooler; hot dashi will scramble the eggs.
Slowly pour the dashi mixture into the beaten eggs while stirring gently. The ratio should be approximately 1 part egg to 2.5 parts liquid.
Strain the egg mixture through a fine mesh sieve at least twice. This is the most important step for achieving a perfectly smooth custard with no air bubbles or egg strands.
Divide the shrimp, chicken, shiitake, and kamaboko evenly among 4 chawanmushi cups or heat-safe ramekins.
Gently pour the strained egg mixture into each cup, filling them about 80% full. If any bubbles appear on the surface, pop them with a toothpick or gently skim them off with a spoon.
Cover each cup tightly with aluminum foil or their lids. Place them in a steamer with water already at a full boil.
Steam on high heat for 2 minutes, then reduce to low heat and steam for an additional 13-15 minutes. The custard is done when a toothpick inserted in the center comes out clean and the surface jiggles like set gelatin.
Remove carefully from the steamer. Top each cup with a sprig of mitsuba and a sliver of yuzu peel if available. Serve warm.
