Open the natto pack and remove it from the container. Discard the thin plastic film covering the beans, pulling it away slowly to manage the sticky strings.

Place the natto in a small bowl. Add the included sauce packet and mustard packet. If your natto did not come with sauce, add 1 teaspoon of soy sauce and 1/2 teaspoon of karashi mustard.

Using chopsticks, stir the natto vigorously in one direction for at least 50 strokes. The mixture should become very stringy, frothy, and pale. The more you stir, the better the flavor develops. Traditional guidance suggests 100 strokes for optimal taste and texture.

Scoop hot steamed rice into a bowl.

Pour the whipped natto over one side of the rice, allowing some white rice to remain visible for textural contrast.

If using, place the raw egg yolk in the center of the natto.

Garnish with chopped green onion, sesame seeds, nori strips, and a drizzle of sesame oil.
