
Loaded Onigirazu Rice Sandwich
A brilliant Japanese invention that is part onigiri, part sandwich, and entirely delicious - a crispy nori wrapper enveloping seasoned rice and layers of colorful fillings pressed flat into a satisfying handheld package. Slice it in half to reveal a stunning cross-section of spam, egg, avocado, and greens tucked inside glistening rice.

- 2 cups cooked short-grain Japanese rice, warm
- 2 full sheets nori (seaweed)
- 4 slices Spam or ham, pan-fried until golden

Instructions
Beat the eggs with the sugar and a splash of soy sauce. Cook in a lightly oiled non-stick pan over medium-low heat to make a thin, flat omelet. Cut into squares roughly the same size as your nori sheet halves. Set aside.
Pan-fry the Spam slices over medium-high heat for 2 minutes per side until golden and slightly caramelized. Lightly brush with soy sauce while cooking for extra flavor.
Mix the warm rice with the furikake and salt. The rice should be seasoned and slightly warm - this helps it stick together and to the nori.
Lay a sheet of nori on a piece of plastic wrap, positioned as a diamond (corner pointing toward you). Spread a thin layer of rice (about 1/2 cup) in a square shape in the center of the nori, leaving the corners clear.
Layer the fillings on the rice: lettuce leaf, egg omelet, Spam slices, avocado, and a drizzle of Kewpie mayo. Top with another 1/2 cup of rice, pressing gently to compact.
Fold the four corners of the nori over the rice stack like an envelope: bottom corner up, two side corners in, then top corner down. Wrap tightly in the plastic wrap and let rest seam-side down for 5 minutes so the nori softens and adheres. Slice in half with a sharp wet knife to reveal the beautiful cross-section.
