  • 1 cup whole milk (or oat milk for dairy-free)
  • 1/2 cup plain whole-milk Greek yogurt

In a medium mixing bowl, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, cinnamon, and salt. Stir thoroughly with a fork for about 30 seconds, making sure the chia seeds are evenly distributed and not clumped at the bottom. They tend to sink and stick together if you do not mix well.

Divide the mixture evenly between two jars or airtight containers, each at least 12 ounces in capacity. Wide-mouth mason jars work perfectly and make eating directly from the container easy.

Press a small piece of plastic wrap directly onto the surface of the oat mixture in each jar (this prevents the top from drying out), then seal with the lid.

Refrigerate for at least 6 hours, but ideally 8 to 12 hours overnight. The oats will absorb the liquid and the chia seeds will swell, creating a thick, pudding-like consistency.

In the morning, remove the jars from the refrigerator and pull off the plastic wrap. Give the oats a good stir from the bottom up. If the mixture is thicker than you prefer, stir in a splash of cold milk, one tablespoon at a time, until you reach your desired consistency.

Top each jar with fresh blueberries, banana slices, sliced almonds, coconut flakes, and hemp hearts. Finish with a light drizzle of maple syrup over the fruit.
