- 3 medium potatoes, peeled and cubed into 1-inch pieces
- 1 cup green peas (fresh or frozen)
- 2 tablespoons oil

Instructions
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter and turn golden, about 15 seconds.
Add the chopped onion and saute until golden brown, about 6-7 minutes.
Stir in the ginger-garlic paste and cook for 1 minute until the raw smell fades.
Add the tomato puree along with coriander powder, cumin powder, chili powder, and turmeric. Cook on medium heat until the masala thickens and oil starts to separate at the edges, about 6-8 minutes.
Add the potato cubes and stir well to coat them in the masala. Pour in 1 cup of water, cover, and cook on medium-low heat for 12-15 minutes until the potatoes are fork-tender.
Add the green peas and cook uncovered for 3-4 minutes until the peas are bright green and just cooked through.
Sprinkle in the garam masala and amchur. Stir gently, being careful not to break the potato pieces.
Garnish with fresh cilantro and serve hot with chapati, puri, or steamed rice.
