Make 3-4 shallow slits on each peeled hard-boiled egg — this allows the masala to penetrate and the eggs to absorb the gravy flavors.

Heat 1 tablespoon of oil in a pan over medium heat. Add the eggs and fry, turning occasionally, until golden-brown spots appear all over, about 3-4 minutes. Remove and set aside.

In the same pan, add the remaining oil or ghee. Add cumin seeds, bay leaves, and dried red chilies. Let them crackle for 30 seconds until fragrant.

Add the chopped onions and cook on medium heat for 10-12 minutes, stirring frequently, until they turn deep brown. This long, slow caramelization is what gives dhaba curry its signature smoky depth.

Stir in the ginger-garlic paste and cook for 1-2 minutes. Add turmeric, red chili powder, coriander powder, and cumin powder. Cook the spices for 1 minute, stirring constantly.

Add the tomato puree and salt. Cook on medium heat for 8-10 minutes, stirring occasionally, until the gravy turns thick and dark, and oil separates from the masala.

Add 1 cup of warm water and bring to a simmer. Nestle the fried eggs into the gravy. Crush kasuri methi between your palms and sprinkle over the curry. Cover and simmer on low heat for 5 minutes.

Uncover, sprinkle garam masala, and stir the gravy gently around the eggs (not through them). Garnish with fresh cilantro and serve hot with steamed rice, roti, or buttered pav.
