Instructions
Rinse the rice under cold water until the water runs clear. Combine with the 1 3/4 cups water in a pot, bring to a boil, reduce to the lowest heat, cover tightly, and cook for 15 minutes. Remove from heat and let steam undisturbed for 10 minutes.
While the rice cooks, bring a small pot of salted water to a boil. Cook the edamame for 3-4 minutes until bright green and tender. Drain and set aside.
Toast the white and black sesame seeds in a dry skillet over medium heat for 2-3 minutes, shaking frequently, until the white seeds are golden and fragrant. Remove from heat immediately.
Whisk together the soy sauce, mirin, rice vinegar, sesame oil, and sugar in a small bowl until the sugar dissolves. This is your savory-sweet glaze.
Fluff the rice with a fork and divide between two bowls. Arrange the edamame, diced cucumber, and soft-boiled egg (if using) over the rice in sections.
Drizzle the soy-sesame glaze over everything, then shower generously with toasted sesame seeds, nori strips, green onions, and a tuft of pickled ginger on the side.
