
Sunshine Poha with Peanuts and Lime
Feather-light flattened rice flakes tossed with crunchy peanuts, sweet onions, and a bright squeeze of lime, all seasoned with popping mustard seeds and fresh curry leaves. This cheerful yellow dish comes together in under 15 minutes and delivers a symphony of textures in every forkful.

- 2 cups thick poha (flattened rice flakes)
- 1 large onion, finely diced
- 1 medium potato, peeled and diced small (optional)
- 1/4 cup raw peanuts

Instructions
Place the poha in a colander and rinse gently under running water for about 30 seconds. Let it sit in the colander for 5 minutes to soften and drain completely.
Sprinkle turmeric, salt, and sugar over the softened poha. Toss gently with your fingers to distribute evenly without breaking the flakes.
Heat oil in a wide pan or kadai over medium heat. Add the peanuts and fry until golden, about 2 minutes. Remove and set aside.
In the same oil, add mustard seeds and let them pop. Add cumin seeds, curry leaves, and green chilies, stirring for 30 seconds until fragrant.
If using potato, add the diced potato now and cook for 5-6 minutes until tender and lightly golden, stirring occasionally.
Add the diced onion and saute for 2-3 minutes until softened but still retaining some crunch.
Add the seasoned poha to the pan and gently fold everything together over low heat for 2-3 minutes, being careful not to mash the flakes.
Return the fried peanuts to the pan, squeeze the lime juice over everything, and toss once more.
Serve warm, garnished with fresh cilantro and grated coconut if desired.
