- 1 small yellow onion, grated and squeezed dry

Instructions
In a large bowl, combine the ground lamb, ground beef, grated onion, two-thirds of the minced garlic, parsley, cumin, coriander, cinnamon, smoked paprika, cayenne, and salt. Mix with your hands until just combined — do not overwork.
Divide the meat mixture into 8 equal portions. Shape each portion around a skewer into a long oval log, about 4 inches long and 1 inch thick. Place on a tray and refrigerate for 15 minutes to firm up.
While the kofta chill, prepare the tzatziki. Stir together the Greek yogurt, grated cucumber, remaining garlic, dill, lemon juice, and olive oil. Season with a pinch of salt. Refrigerate until ready to serve.
Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
Grill the kofta kebabs for 4 to 5 minutes per side, turning once, until nicely charred on the outside and cooked through with no pink remaining in the center.
Serve the kofta kebabs on warm pita bread with a generous spoonful of tzatziki alongside.
