Fresh Pho Noodle Rolls with Seared Beef
Silky sheets of fresh pho noodle are wrapped around seared garlic beef, crisp lettuce, and bundles of aromatic herbs to create elegant, unfried rolls bursting with clean flavors. Dipped into a savory-sweet hoisin-peanut sauce, these rolls capture all the magic of pho in a handheld, no-soup-needed package.
Ingredients
- 1 lb fresh pho noodle sheets (banh pho tuoi)
- 12 oz beef sirloin, thinly sliced
- 4 cloves garlic, minced
- 1 tbsp vegetable oil
+ 12 more ingredients
Instructions
Marinate the sliced beef with half the garlic, fish sauce, and sugar for 10 minutes.
Heat the oil in a skillet over high heat. Sear the beef quickly in a single layer, about 1 minute per side, until just browned but still slightly pink inside. Set aside.
If the pho noodle sheets are cold, gently warm them in the microwave for 15 seconds covered with a damp towel, or steam briefly, to make them pliable.
Prepare the dipping sauce by whisking together hoisin sauce, peanut butter, sriracha, remaining garlic, and warm water until smooth. Pour into small dipping bowls and top with crushed peanuts.
To assemble each roll, lay a noodle sheet flat on a clean surface. Place a lettuce leaf on the lower third, then layer on a few slices of seared beef, a small handful of bean sprouts, and a generous pinch of cilantro, basil, and mint.
Fold the bottom edge of the noodle sheet over the filling, tuck in the sides, and roll up snugly but gently to avoid tearing. Cut each roll in half on a diagonal.
Arrange on a platter and serve immediately with the hoisin-peanut dipping sauce.
