Charred Chicken Tawook Skewers with Garlic Cream
Chunks of chicken breast marinated in a tangy yogurt-lemon bath spiked with warm spices, threaded onto skewers, and grilled until beautifully charred with juicy, tender interiors. Served with a fluffy cloud of whipped garlic cream sauce that you will want to put on everything.
Ingredients
- 2 lbs boneless, skinless chicken breast, cut into 1.5-inch cubes
- 1/2 cup plain yogurt
- 3 tbsp extra-virgin olive oil
- 3 tbsp lemon juice
+ 14 more ingredients
Instructions
In a large bowl, whisk together the yogurt, olive oil, 3 tablespoons of lemon juice, minced garlic, tomato paste, allspice, paprika, cinnamon, white pepper, and salt.
Add the chicken cubes and toss until every piece is well coated. Cover and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
Prepare the garlic cream sauce by whisking together the mayonnaise, garlic paste, 1 tablespoon of lemon juice, and a pinch of salt in a small bowl. Refrigerate until serving.
Preheat a grill or grill pan to medium-high heat. Thread the marinated chicken onto skewers, leaving a small gap between pieces to ensure even cooking.
Grill the skewers for 5 to 6 minutes per side, turning once, until the chicken is charred in spots and cooked through with an internal temperature of 165 degrees F.
Slide the chicken off the skewers onto a warm platter. Serve with the garlic cream sauce, warm pita bread, pickled turnips, lettuce, and sliced tomatoes.
