An elegant pre-Prohibition classic from Harry's New York Bar in Paris. Gin, triple sec, and fresh lemon juice shaken with egg white create a silky, frothy cocktail of remarkable refinement.
Ingredients
- 2 oz London dry gin
- 0.8 oz Triple sec
- 0.8 oz Fresh lemon juice
- 0.5 oz Egg white
- lemon twist (garnish) garnish

Instructions
Combine gin, triple sec, fresh lemon juice, and egg white in a cocktail shaker without ice
Dry shake vigorously for 10 seconds to emulsify the egg white
Add ice and shake hard for another 15 seconds until well-chilled
Double strain through a fine mesh strainer into a chilled coupe glass
Allow the foam to settle and rise to the top for 15 seconds
Garnish with a lemon twist laid across the foam
