
Tequila Sour
A silky, citrus-forward cocktail with tequila, lemon, and a velvety egg white foam — bright, balanced, and elegant.
Ingredients
- 2 oz Blanco tequila
- 1 oz Fresh lemon juice
- 0.8 oz Agave syrup
- 0.5 oz Egg white
- 2 dashes Angostura bitters
- 3 drops Angostura bitters on foam (garnish) garnish

Instructions
Add tequila, lemon juice, agave syrup, and egg white to a shaker without ice
Dry shake vigorously for 10 seconds to emulsify the egg white
Add ice and shake hard for another 15 seconds
Double strain into a chilled coupe glass
Drop 3 dots of Angostura bitters on the foam and drag a pick through them for a decorative pattern

The dry shake (no ice first) is essential for building a thick, stable foam Aquafaba (chickpea liquid) is an excellent vegan substitute for egg white at 1 oz Double straining through a fine mesh removes ice chips for a smoother texture
