Single Village Fix
A showcase cocktail designed to highlight a single-village mezcal's unique terroir. Pineapple gomme syrup and lime provide a tropical sweetness that frames the spirit rather than masking it, while Ancho Reyes adds a warm chile undertone.
Ingredients
- 2 oz Single-village mezcal
- 0.8 oz Fresh lime juice
- 0.5 oz Pineapple gomme syrup
- 0.3 oz Ancho Reyes chile liqueur
- dehydrated pineapple wheel (garnish) garnish
- pinch of smoked salt (garnish) garnish
Pairs With
Pair with ceviche or crudo dishes that highlight fresh seafood—the pineapple gomme's sweetness and mezcal's smoke beautifully complement the citrus and briny flavors. Roasted bone marrow or charred vegetables also work wonderfully to echo the mezcal's terroir.
Instructions

Fill shaker with ice and shake vigorously for 15 seconds
Fill a rocks glass with crushed or pebble ice
Strain the cocktail over the crushed ice
Garnish with a dehydrated pineapple wheel and a small pinch of smoked salt on top
Tips
Make pineapple gomme syrup by simmering equal parts sugar and fresh pineapple juice with a small amount of gum arabic until thickened; it adds body and tropical flavor Choose a mezcal with distinctive terroir character — tobalá, tepeztate, or cuixe varieties are ideal for showcasing unique flavors The smoked salt garnish bridges the gap between the fruit and the mezcal smoke; a tiny pinch on the surface is all you need
