Instructions
Add aged dark rum, pineapple juice, orange juice, and cream of coconut to a shaker
Fill with ice and shake vigorously for 15 seconds to emulsify the coconut cream
Strain into a highball glass filled with crushed ice
Grate fresh nutmeg generously over the top
Garnish with a pineapple wedge on the rim
Tips
Pusser's Navy Rum is the traditional choice and its rich, full-bodied character is integral to the drink Shake extra hard to fully incorporate the cream of coconut, which tends to cling to the bottom of the shaker Freshly grated whole nutmeg is far more aromatic than pre-ground; keep a whole nutmeg and a microplane behind your bar
