
Mezcal Sour
The essential sour template applied to mezcal. Egg white adds a luxurious foam that tempers the smoke, while fresh citrus and agave nectar keep everything bright and balanced. A perfect introduction to mezcal cocktails.
Ingredients
- 2 oz Mezcal
- 1 oz Fresh lime juice
- 0.8 oz Agave nectar
- 0.5 oz Egg white
- 2 dashes Angostura bitters
- Angostura bitters drops on foam (garnish) garnish
Pairs With
Complement with lemon or lime-forward desserts, poached seafood, or soft cheeses with fruit. The egg white foam and citrus cut through smoke elegantly, pairing well with delicate, tangy, or creamy foods.
Instructions
Combine mezcal, fresh lime juice, agave nectar, and egg white in a shaker without ice
Dry shake vigorously for 15 seconds to emulsify the egg white
Add ice and shake hard for another 15 seconds
Double strain through a fine mesh strainer into a chilled coupe glass
Drop 3 to 4 dots of Angostura bitters onto the foam and drag a toothpick through them to create a design

The dry shake (without ice) is essential for building a thick, stable foam — do not skip it Aquafaba (chickpea liquid) is an excellent vegan substitute for egg white at 0.75 oz per drink Use fresh lime juice rather than lemon — lime is more traditional with agave spirits and pairs better with the smoke
