Instructions

Add gin, fresh lemon juice, simple syrup, and egg white to a shaker without ice

Dry shake vigorously for 15 seconds to emulsify the egg white

Add ice and shake again for another 12-15 seconds until very cold

Strain into a chilled highball glass without ice

Top with club soda poured slowly to build a foamy head
