Pair with delicate Italian appetizers like burrata and heirloom tomatoes or light seafood preparations. The Aperol and maraschino add herbal elegance that suits refined, understated dishes.
Instructions
Combine mezcal, Aperol, maraschino liqueur, and fresh lime juice in a cocktail shaker
Fill with ice and shake vigorously for 15 seconds
Double strain through a fine mesh strainer into a chilled coupe glass
Express a grapefruit peel over the drink to release its oils
Rest the grapefruit peel twist on the rim of the glass
Tips
Luxardo maraschino liqueur is essential here — do not substitute cherry brandy or other cherry liqueurs, as the dry, nutty character of maraschino is what makes this drink work A lighter, less smoky mezcal allows the Aperol and maraschino to shine through without being overpowered This drink is excellent as a dinner party starter because it is complex enough to impress but approachable enough for all palates
