Campari and Soda
The quintessential Italian aperitivo in its purest form. Nothing more than Campari, soda water, and ice, this is how Italians have been starting their evenings for over 150 years.
Ingredients
- 2 oz Campari
- 4 oz Club soda (well-chilled)
- orange slice (garnish) garnish
- green olive (optional, Italian style) (garnish) garnish
Pairs With
Pair with Italian antipasti platters featuring cured meats, aged cheeses, and marinated vegetables. The bitter, herbaceous notes of Campari cut through rich, salty flavors perfectly.
Instructions
Fill a highball glass with ice cubes
Pour Campari over the ice
Top with well-chilled club soda
Stir gently once or twice to combine without losing carbonation
Garnish with an orange slice and optionally a green olive on a pick
Tips
In Italy this is often served with a green olive on a cocktail pick — it sounds unusual but the brininess pairs remarkably well with the bitter Campari Use strongly carbonated soda water; flat soda makes this drink taste medicinal rather than refreshing This is the perfect drink to order when you want something bitter and low in alcohol before dinner
