Brandy Fix
A forgotten classic from the Jerry Thomas era that layers brandy with pineapple syrup and tart citrus over finely crushed ice. The Fix is the ancestor of many modern sour-style cocktails and rewards rediscovery with its bright, tropical elegance.
Ingredients
- 2 oz Brandy
- 0.8 oz Fresh lemon juice
- 0.5 oz Pineapple syrup (or pineapple gomme)
- 0.3 oz Orange curacao
- pineapple wedge (garnish) garnish
- lemon wheel (garnish) garnish
- seasonal berries (garnish) garnish
Pairs With
Pair with tropical fruit desserts or a fresh pineapple upside-down cake to echo the drink's bright citrus and pineapple notes. The brandy's warmth complements buttery pastries and light custard-based tarts.
Instructions
Combine brandy, lemon juice, pineapple syrup, and orange curacao in a shaker
Fill with ice and shake vigorously for 12 seconds
Strain into a rocks glass packed tightly with finely crushed ice
Mound the crushed ice above the rim and insert the garnishes artfully
Serve with a short straw so the drinker sips from the bottom where the drink is coldest
Tips
Make pineapple syrup by simmering equal parts fresh pineapple juice and sugar until dissolved, then straining; it keeps refrigerated for two weeks The Fix, Sour, Daisy, and Fizz were all part of a family of related drink formats in the 1800s, differing mainly in sweetener and dilution style Crushed ice is essential to the Fix format; it dilutes slowly and keeps the drink ice-cold as the flavors open up over time
