
Aperol Sour
A velvety, citrus-forward sour that showcases Aperol's bittersweet orange character. The optional egg white creates a gorgeous foam cap that makes every sip smooth and luxurious.
Ingredients
- 2 oz Aperol
- 1 oz Gin
- 1 oz Fresh lemon juice
- 0.5 oz Simple syrup
- 1 oz Egg white
- orange wheel (garnish) garnish
- 3 drops Angostura bitters (garnish) garnish
Pairs With
Serve with creamy burrata, smoked salmon canapés, or soft cheeses; the velvety sour works wonderfully with rich, delicate appetizers and first courses.
Instructions
Add Aperol, gin, lemon juice, simple syrup, and egg white to a shaker without ice
Dry shake vigorously for 10 seconds to emulsify the egg white
Add ice to the shaker and shake hard for another 15 seconds
Double strain through a fine mesh strainer into a chilled coupe glass
Drop three dots of Angostura bitters on the foam and drag a toothpick through them for a decorative pattern
Rest an orange wheel on the rim
Tips
The dry shake is essential for building a thick, stable foam — do not skip it If you prefer to avoid raw egg white, aquafaba (chickpea liquid) works as an excellent vegan substitute at the same quantity Let the foam settle for 15 seconds before adding the bitters drops for the cleanest design
